Avocado Toast & Home Fries

What You’ll Need.

  • Avocado
  • Slice of Multigrain Bread
  • Olive oil
  • 1/4 Cup Crumbled Goat Cheese
  • 2 Strips of Bacon
  • 3 Cloves of Garlic
  • 3 Radishes
  • 1/4 Cup Vinegar
  • Red Chili Flakes
  • Lemon
  • Mayo
  • Fresh Parsley
  • Honey Mustard
  • Salt & Pepper
  • Smoked Paprika
  • Garlic Powder
  • Russet Potatoes

Scrub your potatoes, then slice into wedges. Fill a large bowl with cold water and let the fries soak in the water for 30 minutes. Put bowl to the side.

Preheat oven to 400 degrees.

While the oven preheats, cut the radishes into thin slices and place into a small bowl with enough vinegar and olive oil to cover them. Add any spices you like, I usually use salt & pepper, smoked paprika, and red chili flake. Let them soak and pickle.

Place garlic cloves in tin foil. Drizzle a little bit of olive oil on top and then pinch the top closed. Roast the garlic for 40 mins, or until soft.

After you put the garlic in the oven, take fries out of the water bowl and pat them dry with a towel (paper or cloth). Spread the fries out on a baking sheet and drizzle with olive oil, salt & pepper, garlic powder, and smoked paprika. Mix everything together with your hands to make sure the spices and oil are evenly distributed. Bake for 30 minutes, or until crispy (you can even add the bacon fat to them after 15 minutes to add flavor. Drizzle on top of partially baked fries and mix together with tongs. See bacon cooking instructions in next step).

While everything is baking in the oven, cook the bacon strips. Crisp them in a frying pan. When crispy, remove from pan, let bacon drain on a paper towel for a few minutes, and then chop into bite size pieces. (Save the bacon grease and apply to fries, if desired. Instructions in step 5).

Remove garlic and fries from oven. They should both be done around the same time. Remove the garlic from tinfoil and place in a small bowl. Squeeze skins off the roasted garlic and mash it up. You can use a fork to mix, or a hand blender. Mix with 1 tablespoon of mayo, 1 tablespoon of honey mustard (if you want a spicy kick or do not like mustard, substitute with wasabi or horseradish), a drizzle of olive oil, juice from half of a lemon, and a pink of smoked paprika, salt & pepper.

Toast a slice of multigrain bread and then spread your garlic aioli (the mixture you just made) on top.

Next, slice avocado. Lay your sliced avocado to cover the toast (half an avocado usually fits on one slice of toast).

Remove radishes from bowl and any remaining liquid. Slide them in between your avocado slices (this will keep the radishes from sliding off). Add the bacon bits & crumbled goat cheese on top. Now that your mouth is watering, finish your creation off with a drizzle olive oil, a squeeze of lemon juice, salt & pepper, red chili flakes, and parsley. If you want to add some protein, add a fried egg. Now, it is time to enjoy your avocado toast and fries!
