Birthday Cake Martini
I would apologize for the explosion of sprinkles this week but what better way to say happy birthday! It was my husband and a few good girlfriends birthday this week, so I will drink all the cake flavored, sprinkle rimmed martinis! Our family loves to celebrate special occasions with good food, lots of cake and drinks, so naturally a drinkable cupcake is the perfect dessert to end a birthday. I have tried birthday cake martinis at upscale restaurants before, but they always consist of heavy cream or half and half. I have a milk allergy and unfortunately have not ever been able to enjoy these fun cocktails. The only solution was to create my own version of funetti fun!
What You’ll Need:
- Funfetti Cake Mix
- Frosting or Cream Cheese
- Rainbow Jimmies (Sprinkles)
- White Chocolate Liqueur
- Vodka
- Whipped Cream optional
- Cocktail Shaker
- Ice
- Martini Glass
- Dessert Plate
Use a butter knife to spread frosting (or cream cheese if you prefer a less sweet option) to coat the rim of the martini glass. Spread the rainbow jimmies on a dessert plate. Dip the martini glass rim into the jimmies and twist until covered. Set glass aside.
In a cocktail shaker, mix: 4 ounces of vodka, 1 ounce of white chocolate liqueur, 2 tablespoons funfetti cake mix and ice. Shake vigorously until frothy and cold. Pour shaker contents into the martini glass. Optional to top with whipped cream.
