Wine Not Cupcakes

I cannot think of a better combination than chocolate and red wine! So why not make some boozy cupcakes.

What You’ll Need.

For the Cupcakes:

  • 1 Box Devils Food Cake Mix
  • 2 tablespoons of Baking Cocoa
  • 1 cup of Red Wine
  • 1/2 cup of Water
  • 1/3 cup of Cooking Oil
  • 3 Eggs
  • Bag of chocolate chips
  • Cupcake Liners
  • Cupcake Pans

For the Frosting:

  • 2 Sticks of Softened Butter
  • 3-6 cups of Powdered Sugar
  • Cherries
  • 1/4 cup of Red Wine
  • Tub of Cream Cheese Frosting (optional)

Preheat oven to 350 degrees. Then line cupcake tins with cupcake liners (with all of the chocolaty goodness it is important to use the liners!) Now mix all of the cupcake ingredients with your mixer. Beat cake mix, 2 tablespoons of baking cocoa, 1 cup red wine, 1/2 cup water, 1/3 cup cooking oil (I use extra virgin olive oil), and the eggs. Fold in the chocolate chips. You can use as many chocolate chips as you would like, I personally just dump the whole bag in!

Fill cupcake pan with batter and bake for 18 minutes.

Let the cupcakes cool about 10 minutes before removing from the pan, and then place them on a cooling rack.

Now for the frosting! There are two different ways to make the frosting, depending on your sugar preference. The frosting recipes both start off the same way, so you have a little time to decide! In a large bowl, add the 2 sticks of softened butter (not melted!) and 3 cups of powdered sugar. Mix until the mixture is fluffy. Add 1 cup of cherries (Use whole cherries, the mixer will break them up. Pitted cherries, Maraschino cherries or cherry pie filling all work!), beat and combine with the butter and sugar. Add 1/4 cup of red wine. Now it is decision time! Either add 3 more cups of powdered sugar to your mixture, or add a tub of Cream Cheese Frosting. I choose the latter. The cream cheese will make the frosting less fluffy, and much more runny, but it cuts the sweetness factor in half. Either way, beat the frosting until completely smooth.

Transfer frosting to a piping bag. Frost cupcakes. Optional: Garnish with small cherry pieces.
