What You’ll Need: Egg Milk (any type) Vanilla Extract Pancake Mix (or from scratch: Flour, Baking Powder, Baking Soda) Cinnamon Sugar Confectioners Sugar Whisk together the egg, milk and vanilla in a bowl. An egg and 1/4 cup of milk (I use vanilla almond milk) makes enough for 12 cookies. Add a teaspoon of vanilla. Add a cup of pancake mix, or roughly 1 cup flour, 1 tablespoon baking soda, 1 tablespoon baking powder, with 2 tablespoons of sugar. Combine together until smooth.
